I want to run my 4 plate Dash 1 as a pot still for rum and whiskey runs next week. I am looking for advice/suggestions on how best to do the conversion.
Can I do this just by removing the copper plates out of the column and leaving everything else the same?

Why would you want to do this?

Rum and whiskey from a 6-12% abv wash - in one run - is the reason I recently bought my Dash 1. Running just one or two plates might give you aging strength in one run

Stinger...thats what I also was thinking...ust run 2 plates instead of 4. The only problem with that is the clearance of the parrot assembly. When it gets dropped that low, it doesn't clear the top of the keg.
So I thought that maybe taking 2 plates out would accomplish the same.

I run 3 plates with my system and make whiskey and rum. Just remove the bottom plate. I wouldn't run without plates less I was stripping. But with a dash, why would you want to?

Thanks Hawk. The overall reasoning of my thoughts on this is that I seem to be outputting product in the 93-95% range and I cant seem to get it lower until the very end.
The product (esp the rum) also lacks flavor. So I thought of running it faster, but that didnt change things very much.So I thought of taking out some of the refluxing to allow more faovr through.
Am I on the wrong track??

I have run my rum with 1 and 3 bubble cap plates. With a single plate I get 88% -85% hearts. With 3 plates I get 92% - 85% hearts. With the 3 plates the rum has a little more whiskey taste after oak aging. I like the single plate for rum. I have only stripped with no plates.

Using all the Tees but removing 2 or 3 of the the plates will keep the parrot assembly at the same height.

There will be less chance of fouling/entrainment issues if the plate is placed at the top.

The addition of a suitable length of 2" tube between the 4" x 2" reducer and the 180 degree bend will also bring the parrot to any convenient height.

I use the bottom then watch the reflux rain down from the top. Makes good rum. Good luck. Tell us after your run.

This is why I like the big baby dephlag. It doesn't have the knock down power of the full size. With no packing inside I just take my power way down for fores and heads and let her rip for hearts. Full flavor at 93% to 87 for hearts.
