Been reading about the new rotary vacuum stills, they seem small but they operate at about 130 f everthing is in a vacuum from the catch bottle to the boiler which is heated with water in the units, 10 thousand bucks for a small unit they say even pepper vodka is not hot distilled with a rotary.. because the capsaicin has a distill point higher than the ethanol you get the pepper taste but not the heat.. Chefs are using it to create new high end dishes and essences bar keeps are making new drinks ect... and it makes a really nice neutral i read...
